Fabulous Green Recipes to Celebrate St. Patrick’s Day, Including my Favorite Green Smoothies!

I know this is a travel blog but given that St. Patrick’s Day is coming up I wanted to share a couple of my favorite “green” recipes that keep me healthy even when I’m stuck in airports and on planes–germs are everywhere. Green smoothies came into my life a few years ago after I started reading about nutrition from celebrity nutritionist, Kimberly Snyder. She introduced me to the idea that you could add greens to your morning by mixing them into a smoothie–and that it wouldn’t taste too terrible.

St. Patrick's Day Green Drink Recipes

 

Adding greens to your breakfast starts the day off right and helps your body start the day off right. Everyone is always asking me what I put into my green smoothies because no one can believe that they don’t taste terrible–even the pickiest eater I know. I used to make a more intense version but these days I like a lighter more palatable version (the old one had parsley and cilantro–kind of a pain to clean cilantro and also it’s not for everyone.) These days I stick to two basic recipes. The first one is sweeter and may be a good place to start out if you’ve never drank your greens before, the other is a bit more cleansing. So try these out on Tuesday after the luck of the Irish may have worn out and you’re just left with a bit of a hangover!

Sweet Greens Recipe

4 bananas (Peel, cut into small chunks and freeze)
1 Box of fresh baby Spinach or 1 head of Kale (remove stems and discard)
2 Cups of Cold Water or Almond Milk
1/2 Avocado (Optional)

Add all ingredients (I add spinach first) and blend until smooth. Mix in 1-2 Tbsp. Chia Seeds after blended. Let sit for about 10 minutes until Chia seeds expand. They will turn into a gelatin-like consistency that I love.
Keeps for about 1 Day in the fridge. Makes 3-4 Servings.

Morning Glory Green Smoothie

1 Head of Kale (Curly or Dinosaur) (Remove stems and discard)
1 Box of Fresh Baby Spinach
2 Green Apples (Cored and chopped)
2 Lemons (You can either juice them or peel them and remove the seeds)
1 Cucumber (Chopped)
1-2 Frozen (Peeled) Bananas (optional)

Add all ingredients and blend until smooth. Keeps for about 1 Day in the fridge. Makes 3-4 Servings.
*Use all organic where possible. Who wants pesticide for breakfast?
